Ramos Gin Fizz
Ingredients for the Ramos Gin Fizz
- 2oz Gin
- 1/2oz Heavy Cream
- 3/4oz Simple Syrup
- 1/2oz Lemon Juice
- 1/2oz Lime Juice
- 3 Dashes Orange Flower Water
- 1 fresh Egg White
- Chilled Club Soda, to top
The Ramos Gin Fizz is a classic cocktail, said to have been invented by Henry Ramos at the Imperial Cabinet Saloon.
This cocktail took the 1888 bar scene in New Orleans by storm, cementing the Imperial Cabinet as a top spot for tourists and city natives alike.
Combining the citrus notes of the lemon and lime with the beautiful tannins of a good gin, this cocktail has a strong base that is only elevated even more by the signature eggwhite head and subtle notes of orange blossom
How to make the Ramos Gin Fizz
- In a boston style shaker, combine the Gin, Simple Syrup, Lemon and Lime juice, and eggwhite
- Drop in the spring from a hawthorn strainer, and shake vigirously for around 30 seconds
- Open the shaker and add the orange flower water, as well as a handfull of large ice cubes after removing the spring
- Shake for at least 5 minutes, up to 10 for best results
- Strain the drink into a tall collins glass, avoiding any large chunks of ice
- Very carefully pour club soda down the edge of the glass or a bar-spoon, allowing the foam to rise above the lip of the glass
The popularity of this cocktail, although good for business, was a nightmare for the bartenders at Imperial Cabinet due to how long you need to shake the drink
In order to keep up, Henry decided to hire dedicated "shaker-men" to take turns shaking the drink while freeing up the bartender to do other tasks in the meantime
Patrons of the bar reported a Small army of bar-backs, each shaking the drink for 1 minute before passing it to the next man in line.
Its said that the drink was always shaken for at least 12 minutes and up to 20 on nights Henry was overseeing the bar.
